Vegan Cheesecake

I’m going to remake this in November.

No bake, Easy Cheesecake

  • 14 oz silken tofu
  • 8 oz tofutti cream cheese
  • 1/2 c vegan sugar
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • 1 9” pie crust

  • *I’m not a vegan so I used regular cream cheese.
    I also used soy milk because I didn’t have vanilla extract.*

    First drain the tofu & cut into chunks.

    Mix for a couple minutes the tofu should look ‘crumbly’.

    Then add the cream cheese (cut into chunks).

    Mix until smooth; add the extract, sugar, & cornstarch.

    Mix until the ingredients are well incorporated.

    Transfer into pie crust. Let chill for at least 2 hours.
